The beans that make up this limited-edition coffee have reached Two Chimps all the way from the Renacer Micro Lot in El Salvador. It’s not your regular coffee estate though: it’s also a coffee school, teaching local farmers to implement sustainable techniques in their daily practices. The goal of the Renacer Coffee School is to foster the land used for coffee farming, improving the quality of the soil and boosting the coffee yield. The success of the programme was recognised by the Specialty Coffee Association, who gave it the title of the Best Project of 2023 in its annual Sustainability Awards. Well, how about a gorgeous cuppa that’s also environmentally friendly? 

At the Renacer Micro Lot, ripe coffee cherries begin their journey by being carefully handpicked, then taken to the nearby wet mill. They’re immersed in water to determine which cherries are the ripest. The lucky ones get cleaned, depulped, then transferred to special drying beds. For the following 20–30 days, they’re dried out in the sun for five and a half hours daily. Finally, nice and dry, the beans are shipped straight to Two Chimps, who go on to make the flavours pop by roasting these beans lightly. 

This coffee will turn out amazing regardless of how you brew it, yet its light roast means it’s suited perfectly for filter machines, Chemex coffee makers and French presses.
