Colomba pasquale (or ‘Easter dove’ in English) is a traditional cake enjoyed by the Italians during Easter. Similar to the Italian panettone, the dough for this cake is made with flour, eggs, sugar, natural yeast, and butter. It’s then fashioned into a dove-like shape to represent peace and hope, and is usually topped with pearl sugar and almonds before baking.
All the softness of naturally leavened dough, enhanced by the addition of candied apricots and delicious caramel chips… Even the pickiest cake connoisseurs are guaranteed to be impressed!
