From the Colombian region of Huila, famous the world over for its unique specialty coffees, green coffee beans travel to Vancouver, Canada, where the headquarters of Swiss Water Decaf are located. Once there, the beans are decaffeinated using one of the most advanced decaffeination technologies in the world, which bears the name of the company that developed it.
During the incredibly subtle process, nothing but pure water is used. Green coffee beans are submerged in warm water, which causes the caffeine and flavour particles to dissolve. Once that’s done, a new batch of beans is immersed in this liquid: this time around, however, caffeine dissolves, yet the taste of the beans is preserved thanks to the flavour-saturated water. As a result, up to 99.9% of caffeine is successfuly removed from the coffee, while its aromas and flavours remain pretty much intact. This gentle, delicate decaffeination method is only applied to specialty coffees of the highest quality.

Specialty coffee includes only the world’s best-rated varieties. Who rates it and how do they do that, you wonder? Well, the rating is in the hands of certified coffee tasters. They evaluate the quality of the coffee they’re presented with based on the scale created by the Specialty Coffee Association (SCA). Four criteria are assessed: origin, the appearance of green beans, the aroma of the prepared brew, and its flavour characteristics. Only coffees that end up scoring somewhere between 80 and 100 points can be rightfully referred to as “specialty”.

It’s been decaffeinated using the innovative Swiss Water® decaffeination technology, which is known to be the best in the world. Such decaffeination is particularly gentle: it involves pure water only (no chemicals at all!) and results in the finest aromas and flavours of the beans being preserved to the fullest.
Yes, this blend consists of coffee beans of the Castillo, Caturra, Colombia and Typica subspecies, all of which belong to the arabica variety.
