Colomba pasquale (or ‘Easter dove’ in English) is a traditional cake enjoyed by the Italians during Easter. Similar to the Italian panettone, the dough for this cake is made with flour, eggs, sugar, natural yeast, and butter. It’s then fashioned into a dove-like shape to represent peace and hope, and is usually topped with pearl sugar and almonds before baking.
A mouth-watering glaze, the unmistakable sweetness of pearl sugar, the heady scent of orange peel, and the crunchiness of almonds turn every bite of this classic colomba into a unique delight.
